Banana Papaya Pancakes
    1. Heat griddle or stovetop pan to medium high. Spray with cooking spray or use a little butter to grease pan.
    2. While it is heating, combine all ingredients in a medium bowl, mixing well.
    3. Carefully stir in the fresh fruit.
    4. Spoon the mix onto the griddle and watch for little bubbles to form. Then flip.
    5. When both sides are golden brown, remove from heat, spread with butter, then drizzle syrup on top.

Ingredients

  • (I double this for my family)
  • 1¼ cup whole wheat flour
  • 1 Tablespoon sugar
  • 1 Tablespoon + 1 tsp baking powder
  • 1 tsp. salt
  • 1 egg (or 2 egg whites)
  • 1¼ milk of choice
  • 1 Tablespoon butter
  • ADD-IN’s
  • 2 medium sized bananas, thinly sliced
  • ½ cup papaya, cubed into small pieces
  • **other suggestions: ½-1 cup blueberries, strawberries, raspberries, peaches, or mango.
